Fast Track to Sourdough

Since April 8th, 2001, the day Sourdoughhome.com was launched, I have received tens of thousands of emails asking questions about sourdough. Questions the writers didn't want to ask in public forums. Questions that revealed the weaknesses in the books and web pages covering sourdough - including this one. These questions, and their answers, have served to hone this web site to a keen edge.

Over those years, I have seen many of the same questions from people who are trying to bake with sourdough again and again. There's a ton of information about sourdough in books and on the Internet. And much of it is contradictory and more of it is just plain wrong. What has been missing is a single page that focuses on the first time you bake sourdough bread. Painlessly.

James Hoffman - the Billy Beane of Espresso?

Coffee blogger James Hoffman suggests crema makes espresso taste bad:

After having tried this we sometimes skim the crema of the espresso right before drinking the espresso using two small spoons. This seemes to give a more clean and less bitter cup which is finishing of extremly soft... crema is rubbish!

He also wrote an article about this nearly three years ago. My guess is that 90-95% of the espresso made in the world tastes bad. There's a tough-guy appeal built up around bitter espresso that is all wrong; you've got to acknowledge how bad it tastes before you can figure out how to make it taste good.

Domaine 547

Domaine 547 is a good place to buy wine. Once you buy wine Jill (the proprietress) gets a feeling for what you like and makes recommendation (and sometimes inventory decisions!) as a result. Better, she's got a thoughtful (low volume!) blog. And she's got good taste!
